Honey and mustard feels like such a comfort flavour – and even if you’re losing weight, you don’t have to miss out on your favourite comfort foods. This recipe is high in protein and low in saturated fat, and absolutely delicious.
Serves 3 (2 tacos each)
Ingredients
6 mini tortillas
1/2tbsp olive oil
1 medium red onion, finely sliced
1 small courgette, finely sliced
1 large chicken breast, sliced thinly
1 garlic clove, finely crushed
25g wholegrain mustard
1tbsp honey
1tbsp apple cider vinegar

Recipe
1. Heat a frying pan over a medium heat, with the olive oil in. After a few minutes, add the red onion and saute for 5 minutes. Stir occasionally.
2. Add the courgette and mix together with the onions, and saute for another 3-5 minutes. Stir occasionally.
3. Add the chicken to the pan, and heat until cooked through. Stir occasionally, to prevent sticking.
4. Meanwhile, in a small dish, mix the garlic, wholegrain mustard, honey and apple cider vinegar together until combined.
5. Pour the wholegrain mustard mix into the frying pan, and stir everything until coated.
6. Place a separate frying pan over a medium heat, and place one half of a mini tortilla on the pan (like a book). Place 1-2tbsp of the chicken taco filling into the tortilla. Fold the tortilla over, and pat it closed with a spatula. Fry for 1-2 minutes, then flip onto the other side for another 1-2 minutes until both sides are golden brown. Repeat with the remaining tacos.
7. Serve 2 tacos per person, with a side salad for extra goodness.
